Here are a couple of good mushroom recipes
CHINESE VELVET CHICKEN AND MUSHROOMS
3 whole skinned chicken breasts
2 egg whites
3 tbsp. cornstarch (divided)
1 tsp. sugar
1/2 tsp. salt
1/2 tsp. MSG (optional)
1/4 tsp. pepper
2 tbsp. dry sherry
Flour
1/2 c. oil
1/2 lb. fresh mushrooms, sliced
1 1/4 c. water
2 pkts. chicken flavored broth mix
6 oz. frozen snow peas or 9 oz. frozen French style green beans
1/2 c. sliced water chestnuts
Thinly slice partially thawed meat into 1/8 inch slices. Combine egg whites, 2 tablespoon cornstarch, sugar, salt, MSG, pepper and sherry until smooth. Dredge chicken in flour, shake off excess and dip into batter. Saute chicken pieces in hot oil, a few pieces at a time, drain on paper towel and set aside.
Pour off all but 3 tablespoon oil. Saute mushrooms 5 minutes. Remove from skillet. Add 1/4 cup water to skillet to loosen particles from bottom of skillet.
Add remaining water with 1 tablespoon cornstarch and chicken broth dissolved in it to the skillet and bring to boil. Add snow peas, chestnuts, chicken and mushrooms. Heat briefly. Serve garnished with thin slices of radishes and turnips and bowl of white rice.
MUSHROOMS FLORENTINE
1 lb. fresh mushrooms, washed and dried
butter
2 pkgs. frozen spinach, thawed
1 tsp. salt
1/4 cup chopped onion
1/2 stick melted butter
1 cup freshly grated Cheddar cheese
garlic salt
Saute mushroom stems and caps in butter until brown, browning cap side of mushrooms first.
Line a 10 inch casserole with spinach which has been seasoned with salt, onion and butter. Sprinkle with 1/2 cup grated cheese.
Arrange sauteed mushrooms over the spinach. Season with garlic salt. Cover with remaining cheese. Bake for 20 minutes at 350 degrees or until cheese is melted and browned.
This casserole may be prepared and refrigerated until it is to be baked.
